Wowzers. So I logged a meal on nutrimirror (http://www.nutrimirror.com/userhome.php) to see the total amount of stuff we are working with for the entire meal I cooked and BOY was I surprised! Remember the song...beans, beans good for you heart. Uhm yeah not the canned kind. They are packing about 400 mg of sodium in there, same with canned tomato's! Now - I always rinse and drain the beans because i think that bean goo is gross and I read today that it "could" reduce the sodium by about 41% but then someone else says it doesn't. So - the pickle of adding beans for their goodness but then I introduce other badness. oh the dilemma.
As for the tomato's - i do like the kick the Fire Roasted Tomato's brings so perhaps I will stick with that. I am on the hunt for reduced sodium beans...or perhaps making them from scratch! yickes.

June review 6/2010
Gooch had some blood work done for his insurance and it turns out his cholesterol was day almost 30 points! Not that was high (he was below 200 in january) but it needed to go down. His HDL/LDL ratio is still off but there is some improvement for sure. He was able to get on a generic version of Rx for cholesterol so that is good news!
He is taking a great multivitamin from Shaklee (http://trista.myshaklee.com/us/en/) and fish oil and flaxseed everyday.
We are still struggling with adding fish into our weekly menu's. I blame myself as I am not a fish eatter but we are working on it!
We are also moving and shaking as we are started to play tennis! We have been playing about 2x a week! whoot whoot!

The Kublah Kahn
So - in this town of Clemson many restaurants have come and gone. Many years ago we had one called Explorers that was right next to campus. I can't say it was my favorite, but they had decent "bar food" and of course cheap drinks. They had this on their menu, and after they had left, I completely forgot about this recipe. Then many moons later another bar came to town, and it just so happened to have one of the same cooks as the old place. So then came the rebirth of the Kubla Khan. However, this local watering hole only had introduced it for their lunch menu and sadly, they are no longer serving lunch. SO - in comes my version of this tasty delight. I have tried to stay true to heart healthy, not using any salt and EVOO in lie of butter. I have found Mrs. Dash adds some great flavor punch and although Spicy is not so great on my tummy, its great for the hubby's heart so alas here is my means of making it.
Ingredients
6-10 Chicken Tenders
SPices: Cayanne, Mrs. Dash Spicy Blend, Thyme, Pepper,Any CAjun stuff you have - but be mindfull sometimes those pre-made blends are high in sodium. I do have one but i don't add much of it.
EVOO
1 big Onion or 2 medium Onions
2 Green PEppers
Garlic - few cloves - a big spoonful of the jarred
Pita or Greek Whole Wheat Pitas (I prefer the Greek) - Chopped into bite size pieces
Ranch dressing
LOW SODIUM Chicken Stock- or home made
Marinate the chicken in the EVOO and the spices - Add them all - no measuring here at all - just toss all in a zippy - throw spices in and drizzle with the EVOO. Let sit - 30 minutes, over night whatever you got.
Cook that chicken in an big pan - best if non-stick till nice and brown. While that is cooking cut the Onions/Peppers into long slices all about the same size.
Remove the Chicken from pan - add the onions and peppers and GARLIC cook at about med-high heat. Drizzle with some EVOO if pan too dry. Add All the SPICES too - no measuring just add as much as you think you can handle. About 6 minutes or so after they should be nice and tender.
Once vegi's are good and tender - the pan my have some stuff sticking to it - add some of the chicken stock to coat pan and get all soaked - and a squeeze of the ranch dressing. Then add the chicken to the pot - add more stock of necessary.
Allow all to soak in the goodness of the spices. Then add the cut up Pita Bread.
Mix some Ranch with Cayenne Pepper and drizzle over the mixture in Bowl and enjoy!

Sweet (And spicy) Potato French Fries
This is also another recipe I found in allrecipes.com although I added a few other things to it as I always do ;-) We are searching for some yummy vegi's and with the Chicken Sandwiches I wanted something like a french fry and also get a good vegi in there so I thought of these. They are tasty and GOOD for you!
Ingredients
4-6 Sweet Potatoes - cut into slices like french fries, you can also do thin slices like potatoes chips.
Sea Salt
Pepper
Mrs. Dash spicy blend
Cayenne pepper
drizzle of EVOO -Extra Virgin Olive Oil
Preheat oven 400 degrees -
Cookie Sheet - put alum. foil on it with cooking spray
Put the potatoes in a zip lock bag - mix with all the ingredients in the bag and place on cookie sheet and cook for 20-30 minutes.
Serve with Ranch and enjoy!!

Slow Cooker Buffalo Chicken Sandwhich

This recipe is from allrecipes.com. It’s a tasty one for sure and its easy!! A few hints- if you don’t like it too spicy – add some more of the Ranch mix.
Ingredients
• 4 skinless, boneless chicken breast halves
• 1 (17.5 fluid ounce) bottle buffalo wing sauce, divided
• 1/2 (1 ounce) package dry ranch salad dressing mix
• 2 tablespoons butter
• Blue Cheese Crumbles
• 6 hoagie rolls, split lengthwise
Directions
1. Place the chicken breasts into a slow cooker, and pour in 3/4 of the wing sauce and the ranch dressing mix. Cover, and cook on Low for 6 to 7 hours.
2. Once the chicken has cooked, add add the butter, and shred the meat finely with two forks. Pile the meat onto the hoagie rolls, and blue cheese chunks and splash with the remaining buffalo wing sauce to serve (optional).
